adobo shack is a filipino inspired adobo stand that creates delicious adobo’s, born from the love of filipino food, we want to add our own personal touch to the nations quintessential stew, mixing traditional flavors with locally-sourced and responsibly-produced ingredients.

our adobo use’s only the BEST local and responsible ingredients from NYC’S greenmarkets and responsible food purveyors.

adobo shack will offer a traditional chicken adobo, pork belly adobo and vegetarian tofu steak adobo options– all organic– over garlic brown rice, with a side of our homemade and seasonal atchara (filipino pickles), and an option of adding on our one-hour poached egg. we will also sell our own homemade seasonal vinegars at the market.

we are committed to supporting local, small farms. the chicken is free-range and the pork is heritage breed and pastured. we use local, organic soy sauces & vinegars, and purchase all of our fresh ingredients– from the garlic to mushrooms– from the union square greenmarket.
